When I make a purchase myself, I can no longer see my clients' appointments in the Appointments and Calendar sections, even though I have the Administrator role. I can see upcoming appointments in the Administration section. How can I resolve this? It's important for me to be able to make bookings myself in some cases, but I also need to see my clients' appointments.

My initial guess is that this issue is related to a user role conflict. It seems that your WordPress user, which should be set as an Administrator, might have an additional user role assigned. You can check this in the User Role section. Please ensure that the WordPress user has only a single role assigned.

When I made the purchase, I was assigned an additional role, Amelia Customer, but I deleted it and now only have the Administrator role (screenshot attached). But I still can't see the appointments.

Well, unfortunatelly, that is an issue. Amelia sometimes saves the user role permissions even after the change, In that case, the solution is to create a completely new user role (but only assign a single user role).

Sure. Simply go the User Role section
Click on Add user
Fill in the requirements and make sure to select the Administrator user role. Make sure to not use the already existing email address
You will be able to log in again with this WP user and you should be able to change all the settings.

Yes, by creating a new user with the administrator role, I can now view all appointments with that new user. But is there any way I can use the original user? Will I always have to use the new user to view and manage appointments?

No, as long as you keep the user roles clean, so do have to create new ones. In this particular case, Amelia saved the changes in the database and unless is deleted from the database, it will recognize user roles. For the time being, you can change the credentials of the new wp user.

Yes, thats pretty much it. This would require deep investigation by developers, that why the better (and faster) option is to create a new WP user with a single user role.
