I am using amelia for a counseling site. As such we need to assign 1 specific counselor (employee) to a each client manually and make it so that the client can ONLY select their assigned employee on appointment forms. I don't thing there is a way to do this out of the box in amelia. But I would like some direction or hints as to how a developer might start in creating such a solution.

Currently, there isn't an out-of-the-box option in Amelia to assign a specific counselor (employee) to each client and restrict the client to only selecting their assigned employee on appointment forms. This would require custom development to implement.
A developer could potentially build a solution by customizing the front-end booking form and the backend employee assignments. This would involve adding a relationship between clients and their assigned employee, and then dynamically showing only the assigned employee for each client during the booking process.
