The booking availability times are very rigid - e.g. I have a custimer that would like to book a video, photo and drone for 10.30 on Tuesday but the booking system will only allow 11am even though we have no other bookings that day. Can this be changed?

You can try and set in general settings that default time slot step I 5 minutes and turn off option Use service duration for booking a time slot
This should help.
