The issue was caused by the latest update, Amelia 8.1, but it has been fixed in Amelia 8.1.1.
You can update to this version, and it will work as designed. After the update, you can create a new service, uncheck "show service on site," and it won’t be visible on the frontend. However, an admin will still have the option to book it manually from the backend.
