I was wondering if it's possible to remove the extra step where users have to select a category.
Since we only have one category, this step seems unnecessary.

For that purpose, I would suggest that you preselect a category in the shortcode:
[ameliastepbooking category=1] if you want to show only the services from a category with ID 1.

Sorry for intervening but I need something similar.
As the total number of services is roughly 10, I need to show only all services and not categories in the Amelia booking form v2 (as it was possible in v1).
Can this be done?

This would be possible only if all the services are assigned to a single category and then use the following shortcode for catalog booking form:
[ameliastepbooking category=1] if you want to show only the services from a category with ID 1.

no, unfortunately, it does not. I wish we could skip the services/ sub-services structure and have only all services shown at once. Alternatively, I would have to restructure all my services (prepared for booking form v1) and just "throw" them into a single generic category, I guess
