At the moment, we do not have a built-in option to change the default Excel file format to ODF during the export via our Table Tools.
So, the default extension when exporting Excel from our Table will be XLSX.
And you can export the table as PDF via the Table Tools. Please check more on the Documentation hyperlinked above.
If you wish to see an option to change from XLSX as the default export format to ODF for Exdel via Table Tools, you can make a future development suggestion for this, though, we just can't say an ETA on it.
to see if someone may be already suggested this feature. If you can't see it, feel free to add your suggestion there, and as more people vote, the feature will move higher on the priority list.
You can certainly follow our changeLog page if you'd like ( it is also available in the plugin dashboard), where we state any changes/new features/bug fixes during updates;

Other than that - You can try our Report Builder product. It can be used to export the data from the tables, and in this case, you will be able to customize your Excel document, such as adding images, custom text, etc;
And you can also choose which extension that template document will be.
