Unfortunately, currently this feature is not available in Amelia. This is not possible Im afraid as such There is one possible way in which you can perhaps try to achive this.
For example you hide the employee field on a step by step booking form and then on another page you for example you can use catalog booking form and you can show this booking form there and show employees. You can try and preselect shortcodes in a builder and then you choose what services and employees will be shown there.

I need to have some services where you cannot choose any employee and other services where you can choose.
