We're looking to customize our notification emails so that the reply-to address for staff messages is set to the attendee/client's email, rather than the default admin email currently used in all Amelia notifications.
Can we achieve this using the amelia_manipulate_email_data filter?
Unfortunately, there is currently no such option with Amelia's built-in features. You can suggest that feature on the following link: https://features.wpamelia.com/
We carefully follow suggestions from our customers and the more votes the feature gets, the more priority we put on implementing that feature in one of the future updates.

Thanks for getting back to me about this. So the change I would like to make with Regex is to add or alter the email headers "Reply-To" address, I want to set it so that my clients can click reply and it will always send to the person who submitted the original booking or request.
At the moment Amelia has an auto set reply-to of the site admin which is not ideal and there is no setting to change it so I thought this could be a good workaround?
