It's hard to tell what seems to be an issue without the proper investigation, but my first guess is that you are not able to see all the appointments because the WP user you use has multiple users roles assigned. Please, make sure that the WP user only has one user role assigned (it should be just an admin)
Does this include amelia roles as I have her as an amelia employee and amelia manager also?
Also she can only services that are NOT assigned to her. none of the services assigned to her can be seen when she clicks on new appointment from the employee dashboard
Yes, no user roles should be assigned together, whether they are Amelia or Wordpress user role. Unfortunatelly, this creates a conflict because each user role has a specific set of permissions. You don't want to give a customer admin permissions, and vice versa.
ok so i should not tell them to use the wp amelia employee page to make edits but just use the backend? the employee page is not working at all for the employees.
employee dashboard is NOT showing all available services for employees when trying to add appointments.

ok so to be clear, they should only be ADMINs nothing else?
Yes, that's correct. Admins have all the permissions to edit the backend settings. You can find more about the User Roles permissions on this link.
