If someone has booked an appointment, Amelia blocks those times, and it is no longer possible to book an appointment at that time. However, is it possible to block times if the booking is pending confirmation?

It all depend on what you want to achieve.
When you offer group classes you need to enable the option "Allow booking below minimum capacity" in Amelia/settings/appointment settings. When this is enabled, multiple customers will be able to book the same time slot, without having to fill in the minimum capacity.
If you want that it is closed as soon as 1 customer books you need to turn this option off that is it.

Yes, you can set this to be 1 so that as soon as one customer books the time slots is closed or you can set this to more for example 3 and you can enable bring someone with you option so that they must book for 3 people.
