As a tandem paragliding company my bookable employees are all pilots. I presume other users have "Guides", "Instructors" or whatever.
So it should be possible at the frontend to change the label "Employee" to something else. At the moment I dont find that option and I wouldn't want to change it at the database level at the moment since that would probably mess things up.
Yes, you can change this in Customize settings. You need to select the booking form (step by step v2, for example) and then under "labels", you can find the option to translate the strings.
