Hello, If you need to add a different font or Google fonts you have to use wp_enqueue_style to insert them on WordPress. On this link, you can find how. (find the part 'Properly Enqueuing Google Fonts in WordPress').
Then you have to use the CSS rule for table rows and add font-family.
You can add this code in Custom wpDataTables CSS under the "Custom JS AND CSS" in the main settings of wpdatatables or on-page between style tags.
How to install addtional fonts ?
