For the other people looking for a solution, I found one. It isn't ideal, but it's not bad either if you really care about performances. Use the plugin Perfmatters. It's $25 a year, it does things WPRocket don't (they can complement each other), and JS optimization work without breaking Amelia.
It does require a bit of work to make them cohabit (you shouldn't use the same functionalities on both), but in the end my site is faster than just with WPRocket.

I really am the case scenario, what would be great would be if Clément could tell us his configuration between Wp Rocket and Perfmatters for the setting that best suits AMELIA. ?

He mentioned that Perfmatters handles some optimizations that WP Rocket does not and that it works with Amelia without breaking anything.
If you’re currently using WP Rocket and experiencing issues, it might be worth testing Perfmatters alone to see if it improves performance while keeping Amelia fully functional.

I thought I'd try to help and attach screenshots of my config with Perfmatters and WPRocket (screenshots in the next message, I'm limited to 4 files apparently). I'd just like to precise it isn't my job, so I can't tell if this configuration is optimal, nor if it will work on your environment.
A few more things: if you don't see a screenshot of a specific menu, it means it's ticked off... And I'm sorry it's in French 🙃

Like many others here, I discovered there is an incompatibility between WPRocket and your new booking form.
Please do not copy paste the same tutorial that explains that we have to deactivate one of the two JS options in WPRocket.
I have tested it and it works, but this is not a satisfying answer. These JS options on WPRocket save us a precious time.
Do you have any idea of how we could still use these options without breaking Amelia? This could be a small script, maybe?
