For the other people looking for a solution, I found one. It isn't ideal, but it's not bad either if you really care about performances. Use the plugin Perfmatters. It's $25 a year, it does things WPRocket don't (they can complement each other), and JS optimization work without breaking Amelia.
It does require a bit of work to make them cohabit (you shouldn't use the same functionalities on both), but in the end my site is faster than just with WPRocket.

Like many others here, I discovered there is an incompatibility between WPRocket and your new booking form.
Please do not copy paste the same tutorial that explains that we have to deactivate one of the two JS options in WPRocket.
I have tested it and it works, but this is not a satisfying answer. These JS options on WPRocket save us a precious time.
Do you have any idea of how we could still use these options without breaking Amelia? This could be a small script, maybe?
