If you want to permanently not offer them on weekend you can delete them form employee work hours on those days.
If you want to remove them only for some specific days you can create special days in employee modal and those days will override regular days. When you create special day you choose on which services employee will work on. You can red more about it on this link https://wpamelia.com/special-days/.
