client pays 20% by deposit for a £30 service (£6 is taken via stripe or Paypal)
When the client comes for the treatment we take the remainder of the £30 (£24) via cash in the salon.
We cannot add this to the payment, we can only override the amount taken but then it looks as though its all been taken on stripe or Paypal so now our accounts dont add up

If a customer pays for an appointment with an online payment method such as Stripe or PayPal, the payment is always visible as "paid with Stripe or PayPal" even if you change the amount later. The "on-site" is only visible if they choose the "on-site" payment method. Feel free to suggest this on our feature suggestion page.
Unfortunatelly, that's correct. Even if a customer pays a deposit, this is still "stored" as "paid" and depends on the payment method. If a small amount is already paid with deposit option, it will be stored as "partially paid", but the status wont be changed to "on site" when you add the amount.
It will be "partially paid" for payment status, where the amount would be £6, but when you go to the finance page and change the amount ( to full amount), it will say "Paid". But, the status wont be changed to "on site" since it will be still "paid" (Stripe)

even if they have only paid a small deposit via those payment methods?
There is no way to track the remainder?

So the system cannot actually record payments?
Service amount £30
Client pays £6 deposit by stripe
remiander to pay £24
we take £24 on site and add it to the payments but it shows £30 taken by stripe which is untrue
It will be "partially paid" for payment status, where the amount would be £6, but when you go to the finance page and change the amount ( to full amount), it will say "Paid". But, the status wont be changed to "on site" since it will be still "paid" (Stripe)
