When I add a new employee, or edit an existing one, there are 2 quantity fields ('Spots' in attached screenshot). The documentation doesn't seem to mention these. Could you explain their purpose please? I am hoping it is something that will allow an employee to be booked for multiple appointments in the same timeslot.
This option allows you to create custom capacity of each services for each employee. They inherit the capacity that you set for your services in this case service minimum and maximum capacity for your services is 1. But if you want to set some services to be a group appointment for a specific employee you can do that there. Set for example spoet to be 1 and 5 and then 5 people can book the same time slot as a group booking for that employee.

I don't want multiple people booking the same appointment, but rather I need to allow 1 employee to accept 2 separate appointments for the same time period.
Yes, if you set this to 2 this would be a group appointment with two customers.

This would be a double booking and Amelia is designed to prevent double booking so this is not possible Im afraid.
