Amelia inherits the language that is in WordPress. So what you set there Amelia will be translated to that language
Amelia inherits page locale language that you set on that page.
Amelia doesn't have language settings as such, and it inherits its language from WordPress. We have a Spanish translation for example. You need to set the language in WordPress for your site to be in Spanish.
As for front end Amelia follows page locale language you just need to set that page locale language for each page that you want to translate. For example for English you need to set that page locale language is in Eng and then Amelia will be translated automatically. At this time the page is set to Spanish
How can I translate the amelia interface, for example the booking panel for my customers? By default it's in English and I'd like to change it.

If you set it to Spanish it will show in Spanish if you set it to English it will show in English. You can look for solution online for example here https://generatepress.com/forums/topic/change-language-locale-for-specific-pages/
