Hiding the "Are you booking for multiple people?" option: We would like this option to always be activated by default, and only the "How many people will there be?" option to be visible to users. Could you guide us on how to set this up?
Custom order statuses: We have created custom order statuses in WooCommerce, but they do not appear in Amelia. Could you please guide us on how to integrate them so they are recognized and used by Amelia?

I'm afraid we don't understand what exactly you want to achieve and what exactly is the issue? Can you explain in a little more detail and we will gladly help.
Hiding the "Are you booking for multiple people?" option: We would like this option to be automatically enabled by default, without showing the question to the users. Instead, we only want the "How many people will there be?" option to be visible and used by customers. This means that users won’t have to click to enable booking for multiple people; it should be assumed by default.
Unfortunately, currently this feature is not available in Amelia. What you want is not possible at this time since this option is not built in in Amelia. And you are using old outdated booking form so any improvements in Amelia will not be implemented in the old booking form only in new ones.
In new booking form it looks like this
And in customize section you can can change the labels to say something else.

The prioritization of feature development is greatly influenced by the number of customer requests received. By participating and expressing your support, you contribute significantly to the potential expedited implementation of this feature. On the latest version then, is it possible to replace the payment part with the woocommerce checkout directly?
After choosing date and time, it enters this information, it is returned to the woocommerce payment and remove "You will be redirected to the payment checkout." step.
This time we are not sure do you have any issues or if everything is fine now?
Also you are using old 1.0 outdated forms
and we would suggest that you try out our new booking form 2.0 that has a lot more options. New 2.0 form can be customized a lot more the the old ones.
Unfortunately, currently, this feature is not available in Amelia. You can not do that no steps from Amelia can be skipped or turned off this is how form is designed to work and it must follow a specific way of working so that it can function properly. Unfortunately, What you want is not possible to achieve Im afraid.
