We have notifications being send from/to a gmail. Most are received, but randomly some are not received and we find out later that someone booked an appointment or signed up for an event, and we never got the notification.
Is there a specific configuration we should use for gmail? We are using PHP as the mail server. Should we use SMTP instead? With some forms, I use WP Mail SMTP, Would that help? Thank you.
I'm noticed this as well. A handful of notifications to either clients or employees not being sent. We're using WP Mail - Gravity SMTP - Sendgrid for our emails. Can see email logs in Gravity SMTP and match these with BCCs that I receive.
I tried to see if there was some pattern in which notifications were not being sent but very difficult to pin anything down.
Example of instance where a client booked three appointments, first notification sent, second not, third sent and none to the employee. But the employee had received other notification of approved appointments.

I use Gravity SMTP to send emails from wordpress. It is available if you have a Gravity Forms plugin license and has an email log as part of the plugin. Depending on how you send emails from your website you could use an email logging plugin such as WP Mail Logging.
I also set a BCC email address in Amelia so that I can help verify if any email deliverability issues are related to Wordpress/Amelia/SMTP or just the customer's email service.
Unfortunately the email logs can only show if wordpress has attempted to send an email from Amelia, not if Amelia 'forgot' to send it which is what I'm starting to think has happened.
You have currently chosen PHP Mail as your Mail provider in Amelia. In our documentation you can see that this is not recommended
PHP Mail (not recommended) – This option is selected by default for users that do not want to configure other mail services.
Please note: We strongly recommend changing mail service setting to SMTP because email that is sent with PHP Mail generally gets flagged as spam by mail servers and also can take some time to send.
Please check on this Page how to configure other recommended options, such as SMTP and Mailgun mail services.
You can try for example with a Gmail SMTP setup or install a 3rd Party WP Mail SMTP Plugin, then do a Test Email in this Plugin.
Once you set SMTp correctly all should be fine.

Thanks for your answer, i succeeded to change the Mail provider from PHP Mail to SMTP Google Account. Tests look great but I have an issue, when i take an appointment as a customer, i receive the mail of confirmation but the sender is my Google account name. Even if I fill the name of the sender to the mail of my institute. Help would be appreciate.

Please try out this and let us know how it goes. Other users can leave advice that can perhaps helps but we can note resolve their issue on your ticket. You perhaps do not mid but most of other customers do and also we can not keep up with resolving issues for several users on one ticket it will be to complicated and errors can occur.
