Each column can have editing disabled. Simply access the settings of the column, switch to the "Editing" tab, and set the editor input type to "none":
Formula columns, on the other hand, can't be changed in such a way - a formula column will calculate the data based on the formula throughout the column and there's no way to skip any cells.
