I wanted to ask if there was a way to limit certain cells or even just specific columns to be editable rather than an 'all or nothing' situation? And the same for formula columns, so that only some of the cells/columns would apply a formula to them rather than the whole column. Thank you.

Each column can have editing disabled. Simply access the settings of the column, switch to the "Editing" tab, and set the editor input type to "none":
Formula columns, on the other hand, can't be changed in such a way - a formula column will calculate the data based on the formula throughout the column and there's no way to skip any cells.
