Thanks for reaching out to us. Yes, an admin can enter these details manually, but only the fields that you see are available currently. An admin can go to the Customers section and edit the customer details there. Feel free to suggest adding the other fields on our suggestion page.
That I was referring to, actually. An admin can edit this information, but the other information such as address, city and etc is missing. I suggested suggesting this as a feature.

Would it be possible if admin creates a new customer, that the admin can enter the data themselves? such as address, city, phone number?
see photo that you cannot enter any data, except name, email, etc..
You can only enter the data address, city, phone number if you make a manual reservation, and unfortunately this is extra work.
