However, I am unsure whether the checkout page will be a default setup provided by Amelia or if I will have the ability to fully customize it.
Could you please confirm whether the WooCommerce checkout page can be fully customized, for example, to include a checkout location picker or other custom fields? Additionally, if there is any documentation available for implementing a location picker, I would appreciate it if you could share that with me.
The checkout page you need to create on your own Amelia has nothing to with this. Amelia only provide the possibility so that you can accept payments via WooCommerce but for anything related to customization of WooCommerce (the checkout page is theirs) you need to reach out to their support team.
