The time slots given to my clients have no sense in relation to the timings that the company, employess and service have. Basically, my company starts working at 8 am, my workers at 8 am. I have morning services(tours) and evening services (tours). For my employees morning services go from 8 am to 17h. The services have their duration which can be up to 10h. My problem is that the time slots that are given to the clients to choose from are starting at 6.30 am! So I don´t see how is that possible. Please, could you be so kind of explaining me how to correct this issue? Morning tours can begin and have to begin at 8 am, evening tours begin at 18h. No multiple options, no option earlier begining for a bookable event if the company and guide start to work the earliest at 8am.

If the employee work hours are configured to start from 8AM and the service duration is 10 h, then on the booking form the timeslots should start from 8AM and it should be visible like 8AM - 6PM, that's correct. What I think it might be an issue is the timezone settings. Can you please double-check your timezone settings in Wordpress? It should be configured to the nearest city in your timezone, instead of the UTC timezone.
