Hypnotherapy: 90 minutes sessions, four available daily slots M-F: 9:00am-10:30am, 10:30am-noon, 1:00pm-2:30pm, 2:30pm-4:00pm
QHHT: 7hr session, book any entirely open day M-F for 9:00am.
I can't seem to get both working at the same time. If I set a noon-1:00pm "break", then the 4 time slots presented to book the 1st service are correct, but the 7h QHHT session can't be booked.
If I don't set noon-1pm as a "break" or set a gap in Work Hours, the system presents noon-1:30pm as an available option when booking the first service when that's not right. The 7hr QHHT booking works as desired though.
The availability of the service is defined by employees' working hours, so you would need to edit those in order to achieve this.
When you go to Amelia/Employees, and select that employee, go to the Work Hours tab. In there create several working periods. For example:
My employee would work on "Service 1" and "Service 2" from 08:00 - 10:30, on "Second" service from 10:30 - 15:30, and then again on "Service 1" and "Service 2" from 15:30 - 24:00.
You'd be adding these periods by clicking on the blue + sign next to the name of the day, in the top right. You do not have to use the break option just create different time intervals like in the screenshot above.

How do I make hourly slots available 9:00am-noon, 1pm-4pm, but also allow a 9:00am 7hr session to be booked?
You can not since the time interval is cut. The 7 hours must be set in one straight time interval. This is the time length of the appointment and if you cut in in half you can not offer it I'm afraid. If you want to offer 7-hour long session you can not have any breaks. This is how it is designed.
