Hi, I don't know how to eliminate the possibility of viewing how many seats remain available, for the type of event I organize I don't find it useful for users to know how many tickets I sell
Please go to customize section choose the event form that you are using list or cal calendar and there you can find the correct step and there you can hide this data. Just turn off this option and purge the cache.
Should you have any further questions feel free to open separate ticket for each question and we will gladly help you there.

We will try but you need to explore more our customize section for that booking forms since this can be done on few steps for example like this
But if you want to hide this on tickets section then this is not possible Im afraid
Perhaps you can can achieve this with some custom CSS but in Amelia there is no such built in possibilities at this time.
