We did not have any similar issues with he update so this most likely is not update related.
1. Sending service emails that clients did not request - Amelia can not send any email without proper action first in no case scenario can Amelia trigger mail on it own. You can send us example so that we can take a look but this has never happen before for years and for 70000+ of users
2. You can do that easily you just need to check for 3 things
1. You have option Remove Google/Outlook Calendar Busy Slots in Google Settings in Amelia plugin. When you enable this option it will be removed the busy slots in your employees’ Google/Outlook Calendars from their work schedules in Amelia. When enabled, time slots from the Amelia Calendar will be removed whenever there is an event in the Google/Outlook Calendar.
2. In order for these slots to be removed the events in Google/Outlook Calendar must be set as Busy.
3. In settings/inetgrations you gave option called maximum number of events returned to 2500 please make sure that is set like this
And for Outlook is 999
And make sure to purge the cache.
3. The 7.6.1 update fails to install and causes our entire site to bug for several minutes this is either issue with site it self or something with your server and your hosting provider. As mentioned out of 70000+ users only few of them had an issue with update and in all of them none was related to Amelia. Please try and update in 1 out 2 ways that we are sending you

We are sending you a short instruction on how to update Amelia to the latest version.
Go to Amelia Settings/Activation, and make sure that the "Delete Amelia content" slider is disabled.
Then, go to your Plugins section and deactivate the plugin. If you're using WordPress 5.8+, you'll be able to go to the Plugins section/Add New, and upload the file you previously downloaded.
When you upload the file, WordPress will inform you that you're replacing the plugin with the new version, so just confirm that. After the plugin is installed, activate it, and make sure to purge all cache from your website.
Hope this helps in case it does not try it like this
Use FTP to open /yourwordpressfolder/wp-content/plugins
Delete the existing plugin folder ("ameliabooking")
Open the zipped file, and extract the "ameliabooking" folder you see in the zip file into ../wp-content/plugins/ folder
Go to the WP-admin panel and open the Plugins section
Deactivate the plugin, and then activate it again
Clear server and browser cache

The update is impossible here is the message displayed: A new version for Amelia is available. Show version 7.6.1 details. Auto-update is not available for this extension.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
