I have gone through the setup of the Catalog Booking System and would love to use this instead of the Step-by-Step system. How do I use this preference? I only seem to have the Step-by-Step system coming up on my website. The link to my website booking: https://apollo.myvetrehab.com/bookings/

Not sure what you are asking us exactly. Do you want to use catalog instead of step by step form? If this is the case you just need to place that shortcode on the page or just choose catalog widget instead of step by step
