Basically I have one employee in total and that employee wants to charge different pricing for two different sets of hours, so figuring out what ways that would be accomplished.

When there is just one employee, you can configure the pricing, but just one work-hours configuration. Since the work hours (timeslot) come from the employee work hours configuration, you would need to create a new employee and configure pricing. To give you an example - service 1and two employees. Employee 1, work hours (Monday to Wednesday) / price 50 USD.
Employee 2 (Wednesday to Friday) / price 30 USD, assigned to the same service. Depending on the customer's choice, different pricing will be displayed.
The service should be configured as per "standard" configuration, so duration and pricing. For the employees, you would need to create two separate employees and configure their work hours. Looking at your example, the service duration should be configured to 6 hours. Employee 1 need to have work hours configured from 12PM - 6PM (depending on which days you want) and Employee 2 need to have work hours configured from 6PM to 12PM. Something like this -
Of course, you need to assign both employee to the same service and hide the employee select field on the booking form. In this way, your customers will only need to select the service (this is mandatory), but they won't be able to see employees.
To hide the employee, go to Customize, Step by Step 2.0 / Service Selection / Option and you will find the option to hide the employee there.
well the service duration is in booking slots of 30 minutes.
So all bookings for service would be 30 minutes. But how do I set pricing for each employee (one employee would be available half the day, and other one the other half of day.

Unfortunatelly no. By default, one employee can only see his schedule, appointment, and other information. This is because each user role has a specific set of permissions. They are not the same for admin, employee, customers and etc.
so actually I’m using a plugin that allows backend pages to show on the front end. So person logs in with standard Wordpress account, however is forwarded to the front end page with the appointment page inserted via html. Works good it shows. So they don’t use the employee specific Amelia employee panel. That is set up and works.
So with that in mind could have the wordprsss user set as admin-like permission, ect while still being able to have them linked to an employee profile on Amelia employee section.
Idk if that makes sense. Tried to explain as best I can. Lmk.
Basically asking can a Wordpress user have an admin or custom created Wordpress role and still have their info in the employee section for both employees, phone number, email, ect
Not sure about the custom solution here, but I'm pretty sure that assigning multiple user roles to one WP user will result in conflict. It looks like this could be the case here. By assigning the admin user role to one user, you will not be able to use the same user for employees, customer and etc. Certainly, it's not possible to use the same email for multiple users and generally, you want to avoid this, since it will result in user-role conflict.
