Unfortunately, this is only possible if there is just one service or employee. Since there would be no selection option, a customer would just see date/time step first. Otherwise, it will always be a service selection first.

The timeslots visible are based on the service selection, since employee work hours, service, and location, they are all related to each other. The timeslots come from the combination of the service duration and employee work hours, so a customer needs to select a service first and then the timeslots are displayed based on that selection. Unfortunately, these steps are not interchangeable and this is how Amelia is designed to work.

Is it possible to ask customer FIRST choose the date that suits him and only after that they would choose the service and other related info?
