I can't see how to send an event notification to Organizer becasue Notification Settings are for the entire website and events are specific to the Organizer (and of course also the Administrator) Please advise
By default, the appointment notifications are sent to both employee and customer, but for an event, in settings, you can assign employees as "Organizer", or "Stuff". In this way, the employees added here will receive the notifications, not just the customer who books an appointment.
Also, by default, the admin will not receive any notifications, unless if you add his email in Notifications settings, to the field "send emails to additional addresses".

I looked in settings under employees and did not see a way to set what you described, for instance for an assistant, if they also need to get the notification.
Yes, since the user that has been added as "Organizer" will be "treated" as the organizer of that event and it will receive all emails. Also, other employees can be added in "stuff" field, so if the customer books a place for an event, the employee who is added in "stuff" field will also receive an email regarding the booking. Please note that all these settings are related to Events and you can find them in Event settings
By default, when talking about the appointments, only the customer and employee will receive an email regarding the booking. If you want the admin to receive an email as well, you would need to enter his email in the Notifications settings, in this field
