After upgrading to 7.5 the new customer panel shows a drop down list of time zones. The time zone in WP settings is set to London but the time is incorrect when the field is turned off so the booking times are incorrect.

Thank you for reaching out to us.
This shows the time slots to a customer based on the time zone they are in. So if they are traveling they can change the zone there to see at what time their appointments are in that time zone.

The problem is that when the time zone drop down is disabled the bookings are not being displayed in the WP system timezone but in an incorrect zone and this cannot be changed by the customer.

Amelia can not show the booking insincere time zone since it has not time zone option it depend on WP settings. So this customer real or not booked in a different time zone that was probably set in their device and then it show the original time of the booking that was in that time zone.
The appointment time in the customer panel does not change if you change your time zone in WordPress. It stays booked for the original time when the appointment is booked.
