Thank you for the additional explanation now we understand what you want to achieve and I'm afraid that this is not possible to achieve. This part of the booking form is fixed and this can not be altered at this time.

You can only hide the employee in a panel

Perhaps you can try and use this custom CSS

}

Custom code needs to be applied to the page where the booking form is. Depending on what you're using (Gutenberg blocks, or some page builder), adding the CSS or JS can be done in a few different ways.
