I've been trying to update an employee weekdayList, which works fine. But I've tried to update the service associated to the new period, but didn't work.
Let me consult developers regarding this question to give you a precise answer. I will get back to you with the information as soon as i have feedback.
We have reproduced this use case and identified it as an issue that we will be addressing for future updates. Keep in mind that you have to send all the working hours (for every day) when updating the employee. Otherwise, the working hours of the other days will be deleted. Unfortunately, can't promise ETA at this moment, but you can follow the changelog to keep up with the updates.
Apologies for the delayed answer. Developers are already working on fixing this for the next update, but for the time being, you can replace the file user.php in src/Infrastructure/API/ApiRoutes/User/ with the file that I'm sending you via WeTransfer.

I seem to have the similar issue with weekDayList and specialDayList... Impossible to update via API.
