I see a solution, https://tmsplugins.ticksy.com//ticket/3593724/, to adding TrustServerCertificate=True to the connection string for a MS SQLSRV connection, however, this modification would have to be reapplied every time I updated to the latest wpDataTables version. Would it be possible, as an enhancement for a future version, to add an additional field to the MS SQLSRV connection configuration form for additional connection string parameters so that I wouldn't have to keep re-applying this patch?

Yes - for the time being, that is a workaround solution for users that encounter that specific issue for their remote DB connection and you are right; at each Update you would need to repeat that process;
I will pass this suggestion to our Developers as a future improvement/fix that could be added in the Plugin Core.
We can't say an exact ETA on it, because our QA Team needs to do some testing to ensure it does not cause any issues, but we will do our best to add this as an improvement soon.
