If you have a maximum capacity of service set to 19, the customers can book appointments for that service until the maximum capacity is reached. In appointment settings, there is an option called "Allow booking below minimum capacity".
If this is disabled, your front-end customers won't be able to submit a booking unless they fill in the minimum service capacity, but once they book for any capacity above minimum, the time slot will become unavailable for booking for others. If enabled, multiple customers will be able to book the same time slot, without having to fill in the minimum capacity.

the problem I encounter is the following, once I have reserved a service (for half a day for example) I cannot make a reservation on the same date with another service (for a day for example)

This is probably because the employee is assigned to both services. If you book an appointment for service 1, that means that the employee's working hours are going to "cover" the whole day's service, but the employee won't be available for booking for full-day service.
I guess this is related to the Stripe account that has been connected, but, by default, the employees and customers are only getting the information that has been configured in notifications templates. Unfortunatelly, there is no placeholder for Stripe receipt in templates.
