For the first question you can change the service only if this is the part of the same category and if there are other employees that are working on the sam services. If there are none other then you can not make any changes.
As for second issues you have enabled option in role settings admin can book at any time there also you have option called Booking Time Slots will depend on the service duration that you need to turn off
And then if your default time slot step in general settings is set to 5 or 15 minutes you should be able to choose time slot on every 5 minutes that are available for booking
This should help.

Ok, so if I assign all employees to all services i can change from service 1 to service 2. is that correct?
But if i do so that would also mean that anyone can book same service ( in our case meetingroom) on same date/times, double or triple? Isnt it?? And thats i of course not what we want..
1. Yes that is correct. If you have several employees on several services you can switch services and employees
2. Yes, if you have several employees available for same service then they can book same service several times if there are available time slot and employees
So in your case it is best to cancel this appointment and then book a new appointment. There is no other way.

1. You can not change the service since you have only one employee working on that service. So for example
1. If you have one category
2. 5 services
3. and you set that all your employees are working on all 5 services
then you can make the changes.
If you have separate service for each employee then you can not make any changes
