I have a service, with 13 appointments to book at the same time. When I book at the same time with different users .... I don't see how the <div> of the capacity of booked appointments is being "painted".
Not sure if i understand correctly, but in the backend, if you have a maximum capacity for a service set to 2 or above, for a certain appointment, there is capacity information.
Perhaps, you are looking for a different solution?
In the Customize section, when you select the Step by Step booking form, select the date and time step. Under options, you find "show busy time slots". This is not enabled by default, so you can enable it and see if it works.

I think that a client should see the days occupied by times for the service he wants to book, in this case by the ID of the service in the calendar shortcode. Am I doing something wrong?
Most probably the issue could be related to the service ID. While the "busy" time slots display is working, i'm suspicious that they have been made the opposite. Maybe I'm wrong, but double-check the ID of services in shortcodes.

Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.

If I assign only 1 place to my "Vinyasa Yoga" service and I set two times (9am to 10am and 11am to 12am) when I book at 9am and go back to the calendar... I see correctly the occupancy on that day.
If the service has more than one place... it is not reflected until it is full.

So, if one employee is assigned to two services, and the max capacity is set to more than 2, without all slots booked, then the timeslots should be available for Service 1. Service 2 for the same timeslot won't be available, since the employee can only be in one place at a time.
Now, when you say "service has more than one place" does that mean that the employee is assigned to different locations and assigned to that service?
The time slots are always different, there is only one employee who teaches the classes all days:
"The service has more than one slot"... sorry, meant to say: If "the service has more than one appointment", it is not reflected until it is full. (damn translator hahahaha)
Apologies for the delayed answer. So, to summarize, here is how this works. The busy slots are always present for this particular employee and services not depend on the employee ID and different pages. If one service has maximum capacity set to 5, for example, the busy slots will not be visible on the booking form, because it is still available for other customers to book the timestlos. When the timeslot is fully booked (maximum capacity of 5 people) then it will be displayed as busy slots.
