Additionally, I've encountered an issue where, after saving a notification, reopening the page results in the automatic generation of HTML tags like <p><br></p>, which wasn't intended.

In regards to the second part, we have noted this issue and passed it to our developers and it will be resolved as soon as possible.
What I mean about the appearance of the emails is that there aren't many customization options even though we can add HTML code in your editor. It's not a major issue, but I was wondering if, for example, I could retrieve a hook in my code to inject the content of mail notifications into an HTML template.
From what I know, there are no hooks that can help you out here, but please check them out here.
I've seen people using the HTML editor in the past, and the emails they sent out included headers, footers, custom images, centered content, etc. so I know that it is possible to do it. Once you add the HTML code, however, you shouldn't switch back to the classic editor since HTML will be lost.
Also, if the code is longer than 56.000 characters, it may break.
I can try out your HTML locally, for testing. If you're OK with that, just provide me with the code (you can zip the HTML file and upload that in the response just make sure to enable the PRIVATE response, so it's only visible to us).
