If I understand correctly, you have two categories that you want to show ("Massage" and "Reflexology"), but when you define the shortcode, only services from one category appear. Is that correct?
I tested this locally, and I wasn't able to replicate the behavior, so please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
The issue is with the configuration of the Customize section. You've disabled the field showcased in the screenshot attached to my response.
The "Skip Categories Step" option only skips the category step and shows the services but, by default, it shows the services per category. So, when you hide the "Categories" side menu in the Customize section, you're not able to switch between categories. I enabled it and now it shows like this:

That is a default behaviour and that block that is added basically says to WordPress to skip the first step of the catalog booking form.

To clarify: have cat1 with service S1.1 et S1.2 and cat2 with S2.1 and S2.2. setting your shortcode the first step will show S2.1 and S2.2

At this time, this has to be turned on because there's no way to show all services in a single card when using the Catalog booking form.
This example has been forwarded to our developers, so they can work on improving the logic for one of our future updates.
