My client runs two different types of pilates classes, max 5 per class. One class type is for beginners, the other for advanced students. He will also offer private coaching sessions. There is only one teacher.
Should I use appointments or recurring events for the classes? Right now I use event but he wants to offer packages (I know that I will have to upgrade the plugin to Pro version) so appointments may be better with packages.
If Appointments are best, I do not understand how to set them up so that they can only be booked for certain hours on certain days. I don't think that I can limit the employee to those hours because of the two class types and the coaching sessions (which could be at any time).

I would suggest that you create several services based on the duration and capacity of those services.
On the Amelia/Employees/Work hours page, you can set which service is assigned to a specific working hour period.
