An issue with email notifications could be caused by several reasons:
Your hosting provider is blocking all 3rd party settings and only allowing their SMTP (or other) settings.
Your website has a PHP version of less than 7.
The credentials are not correct.
There's something else blocking the notifications from being sent.
If you're using Gmail, please check out this article for detailed setup instructions.
Please check these points, and let me know if you were able to resolve the issue. If you're still not able to resolve the issue, we'll need to remote into your website, and see what's going on.
The problem is not the email settings. In principle, the emails work. For example, participants receive emails when they book courses. However, the customers do not receive any emails when I press the X in the backend for the customers. But I configured everything in the notifications and a test email also worked.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.

But, if i cancel the place in Events, i'm also receiving the notification
According to this, everything is working properly.
That is exactly what i did. As an admin, I've canceled the participant via the backend, and as you can see in the screenshot I've received the email with the text that the place has been canceled.
Apologies, but this is how i tested the notifications. If i go to the red x, the customer that has been added as an attendee (in this case the customer using my personal email) gets the notification that the place has been canceled (as per my screenshot)
In your first email, i can see that you are referring to the customer not getting the email or perhaps you are referring to the fact that you, as an admin not getting the information?
By default, only customers and employees will receive an email regarding the appointments. But, you can add the user to the "organizer" tab in Event settings.
We have now done a few more tests. Unfortunately, we only receive a booking confirmation. We NEVER get a cancel. No matter how we cancel it. What could be the reason? The only email we received about a rejection was when you took the test with Amelia Test a few days ago. Do you have an idea?
Perhaps certain emails are going to the spam folder? It doesn't seem logical that you were able to receive the email from my test, but yet again, you are not receiving the ones from your tests.

If we want to “cancel” a attendee in the backend, then they should receive a notification that the attendee has been canceled.
However, no email is sent, even though it is included in the notifications.

The confirmation email is also sent to the customer. Just like you tried it.
But that's not the problem.
If we CANCEL the participant via the backend, an email should also be sent!
But it does not work.

If you remove the attendee from the list, the email is also being sent.
