When you say "block off", does that mean that you want to remove specific timeslots for the employee working schedule, or to make them available only?
If you want to configure the timeslots for a particular employee, you can use the Special Days option, or if you want to remove them, you can use the Days Off function.
Is there a particular reason to use the Custom Duration and pricing?

I can see, but, unfortunatelly, the page on this URL can't be found. It's says 404 Page not found. I've tried with VPN, as well, but it's the same result.
Regarding the Custom duration and pricing, i've tested on our local and its working properly. So, if you assign the Custom duration and pricing on one service, it will be applied only on that service.
Are you using the latest version of Amelia 7.4?

I'm using the latest version of Amelia 7.4.
Are you using Divi as your page builder?
Unfortunately, it's not working for me. I've also disabled all plugins except for Amelia while still using the Divi theme, but still having the issue.

Thanks for the link, now i'm able to log in. After further testing, with other builders, i'm able to replicate the issue. Looks like Amelia is assigning the custom duration and pricing to all services, even if it is assigned to a particular service and even not displayed on the site.
Let me forward this to the QA team / developers for further troubleshooting and i will let you know as soon as i have the feedback.

There is no ETA at this moment, but you can follow the changelog page to keep up with the updates. You can revert to the previous version, for the time being.
