While this can be changed with the CSS code, i would recommend changing the text with an external plugin like LocoTranslate or PoEdit

I would recommend LocoTranslate, and here are the instructions on how to change the string

When you install LocoTranslate, select Amelia and then choose the Language (in your case Deutsch)

After that search for a string "cancel" or "abbrechen" and then write a text that you want to replace with.

One thing to note, the option for the customers to reschedule the appointment should be on, since this element "cancel" is a part of the div that contains both "reschedule" and "cancel" text, so if the option is disabled, most probably the element will not be visible.

Anyway, developers are working on a complete redesign of the customer/employee panels and it will have the option to change the labels, as well.
