In the "Edit Employee" panel, I wish to link a Wordpress user. However, the only option I'm given is to create a user. Even if I choose to create a user, nothing happens.

Note that my user has the Amelia Customer, Employee and Manager roles.

This is not good this will create a conflict of roles. Each user must have only one role so that Amelia can function properly.
So employee must have only employee role, customer must only have customer role. etc.
So you need to create WP user and give him Amelia employee role and then you will be able to add it in the employee modal.
