We would like to create a notification by email / sms / WhatsApp to our clients once their appointment is complete. How can this be done please?

You can use all of them but you need to set each integration separately. Mail and WhatsApp are free but for SMS notifications you need to purchase SMS credit.

Yes I am aware of the integrations, but I would like to trigger a notification once a job is completed, i.e. one the status of the appointment has changed. Is there a way to add a new status, like "complete" to this list?

I can see that the "no-show" status has been added to Amelia - surely a "complete" status would be easy to replicate. Could you advise on this please? I and several others have requested this feature.
