On my website booking dates are available only from the 17 of January, and since we are still in November I just wanted Amelia to display the nearest available date rather than making the user pick dates to find out there is no booking available. How can I achieve this. It's really important for the UX.

Thanks for reaching out to us.
Please check if the "period available to book in advance" is set to the proper value. Usually, when this is configured to lower the number, your customer won't be able to book appointments before the particular date.

My idea is to have something like [ameliasearch today = "nearest available date"] instead of [ameliasearch today = 1]. I don't know if you get the idea ?
Also, if on the calendar, available dates could be green and non-available dates red, then it will be cool. I don't know if it's possible to have a custom code or hook for that.

Regarding the first topic, sorry to disappoint, but, currently, that is not possible. When it comes to the search shortcode, here is what you can use
Please feel free to search through our feature suggestion page, to see if someone may have already suggested this feature. If you can't see it, feel free to add your suggestion there, and as more people vote, the feature will move higher on the priority list.
You can certainly follow our changeLog page if you'd like, where we state any changes/new features/bug fixes during updates and our newsletter, so you're informed about new features, bug fixes, freebies, etc.
Regarding the second topic, in the Customize section, in the Booking Form, in the Date/Time section, you have the option called "show busy time slots"
If this is enabled, all timeslots that are occupied will be displayed in red, without the option to be booked.
