You should not book from a booking form you will create if you did not already a conflict of roles. Front end is for customers only and back end is for admin and employees. You can book from front end but you always need to book from the incognito window.
Please check in role settings if Automatically create Amelia Customer user option is enabled

I already selected the "Automatically create Amelia Customer", but some times it still isn't creating the customer and I can't see him in the "customers" panel. I tried booking from incognito and also from the backend, and it still happens.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
