Labels can be changed in the Booking Form settings. If you go to the Customize section, and navigate to the Booking Form, for each step, you will have the option to change the labels.
Another way of translating the words is by using POEDIT or Loco Translate for example very easily. I suggest you install Loco Translate and then translate these strings.
