When I try to use front end editing in a WPDT with Gravity Forms as the data source I just get a spinning wheel and the editing or adding option does not render. The result is the same regardless of browser used.
If the date source is a MySql table the features work well on the same page, they just do not work when GF is the source.

We did have some bugs in previous versions for Gravity Tables Editing, so please check if you got the latest wpDataTables 5.8.2 and the latest Gravity Forms, as well as the latest Gravity Form integration Add-on installed.
If you got all of them updated, there should not be an issue.
There are some other limitations for Editing with our Gravity Integration, though, you can check the full list of limitations on the Documentation hyperlink, but here is one of them :
Attachments are deleted when editing – At the moment, if your Gravity Forms have images or other attachments included, you will not be able to properly edit the table generated from the form since the uploaded file will be deleted upon editing. We do not recommend enabling the editing option when you have attachments in the form.

Or if you have the exact same Table and same Plugins+Theme combination working on another Site; Then it can be a conflict, as you said.
You can also check if you use any Gravity Add-ons to make 'additional fields'.
If any field is made by a Gravity Add-on, our integration does not guarantee it will work.
Our devs only made it to work 100% with the Core Gravity Plugin, but for any Add-ons we can not guarantee how it will behave.
