We have one filter with 3 possible options. Is there a way for those 3 options to be pre-populated and avoid the wait for AJAX query to pull in the options?

I am not sure i understand the use-case.
If you mean to simply predefine filtering Values for a Column, you can do this for String Columns.
If you go to Column Settings/Data Tab; And here change the Possible values for column from Read on Table Load to "Define values list";
So you can manually input the predefined filtering options, if you use a Selectbox, MultiSelectBox or CheckBox;
Then on that Column's filter, it is going to load the predefined filter options right away.
But i am not 100% sure if that avoids any kind of an AJAX call for server-side Tables.
